Chef Emma Bengtsson, the culinary mastermind at Aquavit in Midtown, has been introducing New Yorkers to a taste of Scandinavia.
Bengtsson, the head chef at the East 55th Street restaurant, said she believes Scandinavian food stands apart from other cuisines because of the attention to fresh ingredients.
“I believe Scandinavian food is preserving and taking care of everything that the nature gives you – if it’s from land or from sea – and how to make the summer last all year,” she said during an appearance on “Mornings On 1” Friday.
The restaurant landed a spot on The New York Times’ list of 100 best restaurants in the city, and in his review, critic Pete Wells particularly highlighted Bengtsson’s attention to flavors and textures in her prix fixe menus.
