ORLANDO, Fla. — A husband and wife almost lost their home bakery business because of homeowners association rules.
Facing eviction for operating a business in their garage, Loreana Ramirez’s plea on Instagram caught the attention of the Orlando Kitchen Incubator, which has just opened. The Incubator offers fully equipped kitchen space, and Loreana is now a member.
Somos Vanilla is now churning out baked goods there, including its take on chocolate chip cookies.
Construction at the Orlando Kitchen Incubator is nearly complete and can house 33 entrepreneurs.

Somos Vanila’s Chocolate Chip Cookies
Ingredients
- 2 sticks unsalted butter (cold, cut into squares)
- 1-1/4 cups sugar
- 2 eggs
- 3 teaspoons vanilla
- 2-3/4 cups self-rising flour
- 1-1/4 teaspoon cornstarch
- 1 teaspoon baking soda
- 2/3 teaspoon salt
- 1 teaspoon cinnamon
- 2-1/4 cups chocolate chips
Instructions
- Mix the butter with the sugar (until combined)
- Add the eggs and vanilla until well-combined with the butter and sugar.
- Add the salt, baking soda, cornstarch and cinnamon, and continue mixing.
- Mix in the flour until it is combined and no lumps remain.
- Add the chocolate chips, and mix only until the chips are visible throughout the mixture. Do not over-mix.
- Store the batter in plastic wrap for at least six hours in the freezer.
- Form 40-gram balls, place on a baking sheet, and bake for 18 minutes at 350°F.
