Long before anyone could find a plant-based restaurant on virtually every other block in the city, there was “By Chloe.”
The fast-casual restaurant opened on Bleecker Street in the West Village in 2015.
With its vibrant salads, creative burgers and an entire roster of desserts, it quickly became a haven not just for vegans but for all foodies. And from its origins in the Village, “By Chloe” expanded across the country.
But everything changed in 2017 when “By Chloe” founder, Chef Chloe Coscarelli, was pushed out by her business partners, losing control of her brand. The restaurant eventually closed.
Now, Coscarelli has taken back her name and her brand. She reopened her restaurant in the same spot as that first location on Bleecker Street but with a slightly new name — “Chloe.”
Coscarelli joined “The Rush Hour” on Thursday to discuss more.
