New York’s dining scene has bounced back since the pandemic, and it has changed. One restaurant in Manhattan is redefining fine dining.

NoMad’s French Viennese restaurant Koloman has a three-star rating from the New York Times. Pete Wells writes its “owners seem to be betting that many customers are put off by synchronized cloches and the rest of it, and would prefer a little chaos.”

Markus Glocker, Michelin star chef and Emiko Chisholm, pastry chef of Koloman, joined “The Rush Hour” on Thursday to discuss what it’s like launching a fine dining restaurant.
