Joey Gullet of Gully’s in Parrish offers his Grouper Fish Spread.

Grouper Spread
½ medium yellow onion, chopped
1 medium red apple, chopped
2 jalapeno peppers, chopped
8-10 cups  grouper cheeks, throats and fillets—seasoned, smoked, deboned, shredded
10 oz. cream cheese
8 oz. sour cream
2-3 cups mayonnaise, knowing you might add a little more for consistency
3 tablespoons mustard
3 tablespoons Worcestershire sauce
3 tablespoons lemon
Old Bay seasoning, to taste
Blackening seasoning, to taste
Adobo all-purpose seasoning, to taste
Crystal hot sauce, to taste

Start by combing fish and cream cheese.
Slowly add in ingredients, mixing well.
The spread will set and thicken overnight- and crackers should not crack off in it.
