INGREDIENTS:

2 medium large beets, with greens if desired, well scrubbed

1 orange, peeled

small handful of fresh parsley (optional)

1 large or 2 small apples, quartered

3 medium carrots, halved if necessary

one 2-inch long piece fresh ginger

PROCEDURE:

The stalks from the beet greens don't seem to juice very well so remove and discard those and cut the rest of the vegetables and cut a 1 - 2 inch long piece of fresh ginger.

You'll need to cut the skin off of 1 orange if you're using it and you may want to slice the beets in half and you'll want to chop the beet greens up a little bit.

You can line the waste receptacle on the juicer with a plastic bag if you like and turn the machine on to medium speed and juice 1 peeled orange, the beet greens from 2 beets, the handful of parsley and then turn the machine up to a higher speed and 1 quartered large apple, 3 halved medium size carrots, add one 2-inch long piece of ginger and add the 2 halved, small to medium size beets.

This should be enough for two small to medium servings and you'll want to serve it right away for maximum nutrition.

HINTS:

One thing about machines that are dedicated to juicing is that you don't need to peel the vegetables or core some of the fruits, but you do need to give everything a good scrubbing and a rinse under cold water, especially if you're using something like beet greens with the beets.
