SERVES:

INGREDIENTS:

one small baguette (see hints and procedure)

1/2 cup sliced onion

1/2 cup sliced Bell pepper

1 link Italian sausage, removed from casing and crumbled

approx. 16 - 20 thin slices pepperoni

approx. 3/4 - 1 cup marinara sauce

4 slices deli style provolone cheese, cut in half

approx. 1/3 cup grated Parmesan cheese

PROCEDURE:

Cut a small baguette in half lengthwise and in half crosswise and then adding a splash of olive oil to a heavy bottomed pan and sauteing about 1/2 cup each of thinly sliced onion and thinly sliced deseeded Bell pepper.

When those are nice and soft, add one crumbled link of Italian sausage and cook that along to brown up and cook through and turn the heat off.

Once that's cooled down a bit, turn the broiler on to the high setting, spread some marinara sauce over the sliced bread, top that with a few slices of pepperoni and some slices of deli style provolone cheese, place the tray underneath the broiler to melt the cheese and toast the bread a little bit.

Pull the tray out of the oven and, while the melted cheese is still nice and soft, top it with the peppers, onions and sausage and a generous amount of grated Parmesan cheese and place it back underneath the broiler to finish up.

HINTS:

Use a whole large baguette if you like or just 3/4 of it if you can't find a smaller one (18-inches or so in length).
