INGREDIENTS:

two burger rolls, sliced, buttered and toasted

two 6-ounce hamburger patties (see hints)

4 slices bacon

1 Tbs ground dark roast coffee

1 tsp onion powder

1/2 - 1 tsp light brown sugar

salt and pepper to taste

thinly sliced cheddar cheese as needed

PROCEDURE:

 If you want to use just one skillet, start by toasting the buttered sliced burger rolls.

Once the buns are golden brown, take those out of the pan and add two slices of bacon per burger and cook those to crisp up.

While the bacon is cooking, combine 1 Tbs dark roast ground coffee with 1 tsp onion powder, 1/2 tsp light brown sugar and salt and pepper to taste.

Drain the bacon on paper towels when it's nice a crisp and pour off as much of the rendered bacon fat as you can and set the skillet off of the heat for a moment.

Season the burgers on both sides with the ground coffee mix, place the skillet back on medium high heat and cook the burgers to sear them really well on both sides.

As soon as you have a good sear on both sides, but the burgers are still under cooked, place the skillet underneath the broiler on high heat and finish cooking the burgers through.

Then top each one with a little sliced cheddar cheese, let that melt underneath the broiler and it's time to eat.

HINTS:

Use 4-ounce patties instead but I prefer 6-ounce burgers so I can get a good sear on the outside without completely drying the burgers out.

Make sure to wash your hands really well, with soap and water, anytime after handling the ground beef or raw bacon.
