INGREDIENTS:
Streusel Topping:
1/4 cup all-purpose flour
1/4 cup light brown sugar
2 Tbs of butter
Muffin Batter:
1 3/4 cup all-purpose flour
1 cup of light brown sugar
2 1/2 tsp of baking powder
1/2 tsp ground cinnamon
1/2 tsp salt
1 large egg
1 cup of 1/4-inch cubed apple
1/4 cup vegetable oil
3/4 cup of milk
PROCEDURE:
Make the streusel first by combining 1/4 cup all-purpose flour with 1/4 cup light brown sugar and 2 tbs of butter and use your fingers to completely incorporate the butter.
That will end up having a wet sand consistency and then use a large mixing bowl to combine the dry ingredients.
Add 1 3/4 cup all-purpose flour to the bowl and add a loosely packed scant 1 cup of light brown sugar and add 2 1/2 tsp of baking powder, 1/2 tsp ground cinnamon and 1/2 tsp salt and mix everything to combine.
Make sure you break up the pieces of brown sugar in that and, at this point, you'll need to dice 1 cup of 1/4-inch cubed apple, add that to the bowl and toss the apple to coat with flour.
Next, crack one large egg into another smaller bowl and add 1/4 cup vegetable oil and 3/4 cup of milk and whisk that together.
Then add that to the apple and flour mixture and mix that until it's just combined.
Be careful not to over mix that and, at this point, divide it up into the prepared pan and top each muffin with some of the streusel and place the pan onto the center rack of the preheated oven.
HINTS:
They're going to take 18 - 20 minutes to bake and it's a good idea to spin the tray halfway around halfway through.
